1. Tomato and basil soup (serves 2)

Ingredients

  • 1 ¾ cups chopped tomatoes
  • 5/8 cups chicken stock
  • 1/3 tbsp. sugar
  • 6 leaves fresh basil
  • 2/3 tbsps. Butter
  • 1/3 cups double cream

  1. Simmer the stock and tomatoes for 10 minutes.
  2. Add the sugar and basil and cook for 5 more minutes.
  3. Stir in cream and butter until the butter has melted, blend for smooth feel.

2. French toast (serves 2)

Ingredients

  • ½ tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tbsp. sugar
  • 2 tbsps. Butter
  • 2 large eggs
  • 1/8 cup whole milk
  • ¼ tsp vanilla extract
  • 4 slices of bread
  • ¼ cup maple syrup
  • fruit to serve

Method

  1. Mix the cinnamon, nutmeg, milk, sugar, eggs and vanilla extract in a baking dish.
  2. Dip the bread into the mixture; coat fully.
  3. Melt the butter or oil on a pan, add the slices to the pan and brown on each side.
  4. Serve with fruit or/and maple syrup.

3. Fruit toast (serves 2)

  • 1 avocado
  • lime juice
  • Pinch of chili flakes
  • 2 slices of bread

Method

  1. Cut the cherry tomatoes in halves and grill for a few minutes.
  2. Mash the avocado with a fork, add lime juice and chili flakes into the mix.
  3. Toast the bread, spread the avocado and place the cherry tomatoes on top. Season with salt and pepper.

4. Breakfast omelet (serves 2)

  • 4 eggs
  • 3/8 handful of parsley leaves
  • ¾ tbsps. Olive oil
  • 3/8 purple onion
  • 1 ¼ tomatoes
  • 3/8 handful black olives
  • ¼ cup feta cheese

  1. Whisk the eggs in a bowl with chopped parsley, pepper and salt.
  2. Heat the oil in a pan, fry the onions until brown.
  3. Add the tomatoes and chopped olives to the pan, until soft.
  4. Pour the egg mixture until its sets, then add the feta cheese.
  5. When puffed and golden, serve and garnish with more cheese.

5. Pancakes (serves 2)

Ingredients

  • 4 eggs
  • 3 tbsps. flour
  • 3 tbsps. milk
  • 2 tbsps. oil
  • 2 tsps. vanilla extract

Method

  1. Mix the flour, eggs, milk and vanilla extract until smooth.
  2. Heat the oil in a pan; use a uniform measure to pour in the pancake mix.
  3. Cook each side for 2 to 3 minutes.
  4. Garnish with fruit, icing sugar or maple syrup.

6. Bacon Pasta

Ingredients

  • 1 cup chicken stock
  • 1 cup double cream
  • 4 oz. pasta
  • 3 streaky bacon
  • 3/8 cup of parmesan cheese

Method

  1. Boil the chicken stock and cream in a saucepan over high heat, reduce to medium heat after 30 minutes.
  2. In lightly salted water, boil the pasta of choice till al dente. Set aside.
  3. Fry the bacon in a pan, and chop when ready.
  4. Stir in the bacon and cheese to the stock and cream mixture, then pour over pasta to serve.

7. Stir fry Chili Beef (serves 2)

  • 1 tsp chili powder
  • 2 ground cumin
  • 2 garlic cloves
  • 2 tsps sunflower oil
  • 1 yellow bell pepper
  • 1 purple onion
  • 2 tomatoes
  • 2 ½ cups black beans
  • Handful of fresh coriander

Method

  1. Place thin strips of the steak in a bowl with the spices and garlic; stir well to marinate.
  2. Heat the oil in a wok or a pan, then add the beef to brown.
  3. Chop the pepper, half the onion and add to the wok with a splash of water.
  4. Add the tomatoes and beans, if desired seasoning as well.
  5. Serve by sprinkling chopped coriander and the left over onion.

8. Sweet Potato Fries (serves 2)

Ingredients

  • 1 sweet potato
  • ¼ tsp sugar
  • ½ tsp brown sugar
  • ¼ ground cinnamon

  1. Preheat the oven to 220 Celsius.
  2. Cut the sweet potato into fries and place on a baking tray.
  3. Bake for 20 to 30 minutes, until crisp.
  4. Mix the sugar, brown sugar and cinnamon, sprinkle on top. Serve while hot.

9. Chicken Noodle Soup (serves 2)

Ingredients

  • 900 ml chicken stock
  • 1 boneless skinless chicken breast
  • 1 tsp ginger root
  • 1 garlic clove
  • 50 grams rice noodles
  • 3 mushrooms
  • 2 spring onions
  • 2 tsp soy sauce
  • mint

Method

  1. Boil the chicken stock, ginger and garlic in a pan. Add the chicken and let it simmer for 20 minutes.
  2. Remove the chicken and shred using forks.
  3. Place the shredded pieces back into the stock with the noodles, mushrooms, half of the spring onions, and soy sauce.
  4. Simmer until the noodles soften, then serve.
  5. Sprinkle spring onions, herbs and seasoning.

10. Greek Salad (serves 2)

  • 1 3/8 tomatoes
  • 1 spring onion
  • 2/3 avocado
  • 1 tbsp. lemon juice
  • 66 grams feta cheese
  • 1/8 tsp mint
  • 1/8 parsley
  • 1 2/3 tbsp. virgin olive oil

Method

  1. Wash and dry the lettuce leaves, then roughly chop them
  2. Cut the tomatoes into wedges, chop the spring onion.
  3. Half the avocado, and slice then drizzle lemon juice.
  4. Crumble the feta cheese, the mint and parsley and mix.
  5. Mix the lemon juice, olive oil and seasoning. Place all the ingredients in a large bowl and mix.

11. Chicken Wings (serves 2)

Ingredients

10 chicken wings
1 2/3 spring onions
1 2/3 tbsp. honey
2/3 tbsp. soy sauce
2/3 cm ginger root
1 2/3 thyme leaves

  1. Mix the honey, soy sauce, ginger, thyme leaves, in a bowl.
  2. Place the wings into a baking dish and coat with the mixture above.
  3. You can bake in 180 Celsius or fry in hot oil for 15 -20 minutes until dark. Then serve with spring onions.

12. Brownies (serves 2)

Ingredients

  • 16 2/3 grams chocolate
  • 19 1/8 grams butter
  • 50 grams caster sugar
  • 2 eggs
  • 1/8 vanilla extract
  • 20 7/8 grams plain flour

  1. Preheat the oven to 180 Celsius.
  2. Grease and flour the baking tin.
  3. Melt the butter and stir in the chocolate until smooth and well mixed.
  4. Mix in the eggs and sugar, then the flour until even and smooth.
  5. Pour into baking tin and bake for 25 to 30 minutes.

13. Egg- fried rice (serves 2)

Ingredients

  • 1 tbsp. sunflower oil
  • 1 tsp garlic
  • 1 3/8 cups pepper
  • handful of broccoli
  • 1 cup cooked rice
  • 1 egg
  • light soy sauce

Method

  1. Heat the oil in a wok/frying pan. Add the garlic and stir in the peppers and broccoli.
  2. Add the rice and fry for 3 minutes.
  3. Make a well in the rice then add the egg, cook for a minute.
  4. Season with the soy sauce.

  • 20 grams butter
  • 20 grams plain flour
  • 300 ml milk
  • 125 grams shredded cheddar cheese
  • 25 grams grated parmesan cheese

Method

  1. Cook the macaroni in boiling salted water, drain and set aside.
  2. Melt the butter in a saucepan, add in the flour and stir to form a mixture.
  3. Whisk in the milk, to form a thicken smooth sauce.
  4. Turn off the heat, and slowly add in the cheese.
  5. Add the macaroni and mix well.
  6. Place in a deep baking dish and sprinkle more cheese on top.
  7. Cook until brown, serve hot. So easy, the easiest of all recipes every student should know for uni!

15. Signature sandwich (serves 2)

  • ¼ tbsp. cream cheese
  • 1/8 avocado
  • 1 slice smoked salmon
  • 1 tbsp. mozzarella cheese

Method

  1. Spread the cream cheese onto 2 slices of bread, and the avocado on the other two pieces of bread.
  2. Add the smoked salmon over the avocado, and sprinkle some mozzarella cheese.
  3. Heat on a pan until the slices turn golden and the cheese has melted.

16. Chicken Salad Wraps (Serves 2)

  • 1 ½ cups of cooked chicken breast
  • ¼ cup English cucumber
  • ¼ cup celery
  • 2 whole green onions
  • 1 tbsp. flat leaf parsley
  • ¼ cup mayonnaise
  • 2 tbsps. Lemon juice
  • 1/8 ground black pepper
  • 2 flour tortillas
  • 26g lettuce leaves

Method

  1. Mix the chicken, cucumber, celery, onions, parsley, mayonnaise, lemon juice and pepper in a bowl.
  2. Warm the tortillas on a pan or in a microwave till warm and malleable.
  3. Place the lettuce on the tortilla, then place the chicken mixture on the lettuce.
  4. Roll up and secure with foil to keep or toothpicks to serve.

17. Bacon, Eggs and Asparagus (serves 2)

Ingredients

  • 4 asparagus spears
  • 4 smoked streaky bacons
  • 2 eggs

Method

  2. Wrap the bacon around each spear and grill till crisp.

18. Breakfast Quesadilla (serves 2)

Ingredients

  • 4 breakfast sausage links
  • 4 eggs, beaten
  • Pinch of salt
  • Pinch of black pepper
  • 1 tablespoon green onions, chopped
  • ⅓ cup cheddar cheese
  • 2 large flour tortilla

Method

  1. Heat nonstick frying pan on medium-high heat and cook sausages. Using the spatula, tear apart the sausage and create bite-size pieces.
  2. Add eggs, salt, pepper, and green onions and scramble until just cooked.
  3. Place scrambled eggs onto the middle of the large tortilla.
  4. From the top of the tortilla, fold down until it meets the middle of the circle.
  5. Follow the right end of the crease and bring the corner to meet the middle of the top fold.
  6. Repeat the steps until the tortilla becomes a hexagon.
  7. Heat pan on medium heat. Place the folded side down and heat until the tortilla has a golden brown color. Then flip.

19. Mango, Pineapple and Kiwi Sangria (serves 2)

Ingredients

  • 1 cup coconut rum
  • 750 milliliters white wine
  • 2 cups pineapple juice
  • 1 cup soda water

Method

  1. In a pitcher, pour the coconut rum over the mango and kiwi. Chill for 1 hour.
  2. Pour in the rest of the ingredients and stir.

20. Watermelon Fruit Pizza

Ingredients

  • 1 seedless watermelon, sliced into 1-inch thick rounds
  • 1 kiwi, peeled and thinly sliced
  • 1 pint blueberries
  • 1 pint strawberries, diced
  • 1 ½ cups plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 1 tablespoon orange zest (1 orange)
  • 2 tablespoons of orange juice (half an orange)

  1. Slice the watermelon into 1-inch thick rounds.
  2. In a medium bowl, combine the Greek yogurt, vanilla, honey, orange zest, and orange juice and mix until well-combined.
  3. Pour some of the yogurt mixture onto a watermelon round and smooth with a spatula so that the mixture covers the entire round.
  4. Place the kiwi, blueberries, and strawberries decoratively on top of the yogurt sauce.
